Energy Balls
Makes 12
- energy-balls75g raisins
- 50g unsalted nuts – almonds or hazelnuts
- 50g butter – melted
- 25g shredded coconut
Blend raisins and nuts separately to medium fine mixtures. Then mix together along with the melted butter. Mix well.
Form the mixture into small balls. Spread coconut on a plate and roll the balls in the coconut until coated. The can be eaten straightaway or chilled before serving.
Substitute possibilities
Peanut butter or tahini for the melted butter
2 tablespoons honey for the raisins and double amount of coconut
½ teaspoon grated lemon rind
Toast coconut before rolling balls in it
Roll the balls in carob powder instead of coconut
Almond milk
- 10 almonds soaked overnight in enough water to cover
- Pinch ground cardamom
- Pinch of pepper
- 250ml warm water, milk or soya milk
- 1 teaspoon honey (optional)
Drain the almonds, keep the soaking water and remove the skins. Blend the nuts with the soaking water, cardamom and pepper at high speed for 5 minutes. Combine this mixture with the warm milk, soya milk or water. Stir in the honey (optional) and drink at once.
Date Energy Drink (especially good during pregnancy)
- 2 Fresh black dates
- 2 blanched almonds
- ¼ teaspoon fennel seeds
- Seeds of 2 cardamom pods
Soak over night in ½ cup water/rice milk/almond milk. Blend in the morning and drink warm for breakfast.
Hot Milk Recipe
- 1 cup almond or rice milk
- 2 tsp organic almond powder
- 2 cardamom pods
- 5 strands saffron
- pinch of nutmeg
Heat the above ingredients and add one tsp of honey
Take with 2 capsules of organic Ashwagandha at night for a restful sleep

Prune Mousse
- 250g dried prunes, pitted
- 250ml water
- 1 tablespoon agar agar flakes
- 1 tablespoon honey or date syrup (optional)
- 500ml creamy yogurt
- 1 teaspoon lemon juice
- 25g chopped nuts, to decorate
Put the prunes and water in a pan, bring to boil and simmer for 20 mins until soft. Transfer to a food processor and blend until smooth.
Return the prune pruee to the pan, stir in the agar agar flakes and cook for 2 mins. Allow to cool slightly.
When lukewarm, fold in the honey or date syrup, yogurt and lemon juice. Pour into individual dishes and chill until set. Decorate with chopped nuts before serving.
Dates or any other dried fruits may be used instead of some or all, of the prunes.
Paysam
- 1 litre (1 ¾ pints) milk or soya milk
- 3 cardamom pods
- 75g basmati rice, rinced
- 2 tablespoons cashew nut pieces
- 3 tablespoons raisins
- 125ml date syrup/ honey or jaggery
Bring the milk almost to the boil in a pan, reduce the heat to low and simmer for about 15-20 mins, stirring frequently.
Remove the seeds from the cardamom pods, crush them slightly and add to the milk. Add the rice cashew nuts and raisins (add a pinch of ground saffron if desired). Cover the pan and continue to cook over a low heat for about 20-30 mins, until the rice is soft. Remove from the heat, stir in the date syrup/honey or jaggery and serve.
